🍴 CHEF PROFILE
Lindsay Fush has been a preferred caterer across Western Victoria and the South East of SA for more than 20 Years.
Renowned for his culinary innovation and passion for local produce, his ability to create restaurant quality food for any event, in any venue, for any number of guests, is testament to his popularity and longevity in the hospitality scene. Having trained under the watchful eye of Hamilton’s highly regarded Chef and Restauranteur Tony McGillvray and at the three hatted, Royal Mail Hotel in Dunkeld, Lindsay’s career has included stints in Melbourne creating pop up tasting spaces and hospitality takeovers with IDES.
For the last 8 years he has been based in Hamilton where he established his first café – Jack and Jude before relaunching the space as Groke Hamilton in 2022.
He and his team look forward to creating a menu that compliments the aged wines on offer for the 2024 Coonawarra Gala Dinner.

Canapes
Homemade crumpets with wild honey and pate
Ham hock croquette with pea puree
Freshly shucked oyster with house made XO vinaigrette
Confit duck leg tartlet with taleggio and chicken skin
Mains (Shared to centre of table)
36 South Scotch Fillet roasted whole served with celeriac puree and hand picked wild pine mushroom and marrow Jus
Chicken Ballotine stuffed with pistachio and fermented black garlic, and crispy quinoa
Slow roasted Jerusalem artichokes with onion puree, roasted hazelnuts and brown butter
Dessert
Dark chocolate and salted caramel tarts
Assorted cheese served with carrot marmalade and lavosh

During the evening 3 esteemed Coonawarra Vignerons patrons will be inducted, in a ceremony which will highlight the contributions of each to the Coonawarra Wine Region. Enjoy their stories and savour cellared wines of significance.
Current release and back vintage wines will be on offer throughout the evening.
